Baked Salmon with Cilantro Sauce

Salmon is high in protein, contains omega-3 fatty acids, and several B vitamins. Cilantro is a little herb that has shown to possibly have big anti-cancer properties. This dish also makes a beautiful company meal because of the appealing, bright colors.



4 (6 ounce) portions wild salmon
Cracked black pepper
1 cup Cilantro Sauce (See recipe under sauces.)
Canola oil pan spray
Preheat oven to 350 degrees F.
Rinse salmon filets and pat dry with a paper towel.
Cut 4 pieces of aluminum foil large enough to fold over and totally cover each piece of fish.
Spray each piece of aluminum foil with canola oil pan spray so fish does not stick to foil.
Place each salmon portion in the center of a piece of aluminum foil. Sprinkle each piece of fish with cracked
black pepper and then top each piece with ¼ cup of Cilantro Sauce. Close foil tightly around each piece of fish.
Place fish on a baking sheet and place in preheated oven for 15-20 minutes or until fish tests done. Serve
immediately, or refrigerate and serve cold. This dish also makes great picnic fare!
Serves 4.

Cilantro Sauce

Salmon In Parchment


1 small onion, chopped
¼ cup extra-virgin olive oil + 1 tablespoon
1 cup cilantro, packed
2 garlic cloves, minced
Juice of 1 lime
¼ teaspoon salt
¼ teaspoon cracked black pepper
In a small skillet, sauté the onion in 1 tablespoon olive oil until onion is soft and has some color.
Place all ingredients, including onion, into a food processor and pulse until well combined.
Serve over fish, vegetables, or baguette slices.
Serves 4.
